In a world packed with technology and modern advances it seems slightly odd to bring back almost pre-historic methods of winemaking. However, that's exactly what De Martino have done. They've been on a mission to buy up old clay amphorae, or "tinajas" in Spanish, from all over Chile to bring this wine to life. Not only are they using traditional vessels, but the grapes themselves come from Itata Valley - one of the first wine regions to emerge in Chile following the arrival of the Spanish in the mid-16th century - and are farmed using sustainable agriculture, including dry farming and ploughing with horses. The old-vine Itata Moscatel and Chasselas grapes are truly special, and this delicious wine makes a perfect accompaniment to fish and shellfish dishes, as well as Asian cuisine such as sweet and sour chicken.
The Winemaker The Winemaker
Nicolás Peréz
Nicolás Peréz works alongside the fourth generation of the De Martino family. Although he grew up in Santiago, Chile, during his teenage years he travelled constantly to Chilean Patagonia, where he worked on the culinary project of one of his brothers. This is where he first came into contact with the world of wine, getting to know the different producers that were operating at that time. This experience was key to his decision, at the young age of 14, to become a winemaker. From that moment on, this goal was central to all the decisions he took about his life and studies. Despite his youth, he has gained substantial experience working in different international wineries in California and Australia, before returning to his home of Chile.
At De Martino, the winemaking philosophy is based on minimal intervention on single vineyards, including sustainable farming and traditional winemaking methods. Wines are crafted with native yeast, balanced in alcohol and moderate oak (when needed) to preserve the essence of the vineyards. De Martino is proud to be the first producer to bottle single-varietal Carménère in Chile, the first South American Carbon Neutral winery, Chilean Wine Producer of the Year in 2005 & 2009 by IWSC and Chilean Winery of the Year.
"Due to the skin contact, this wine has an orange colour and a slight cloudiness because it has not been filtered. However, because of this minimal intervention it has beautiful aromatic intensity on the nose, as well as good volume and a very particular texture for a white wine on the palate. Thanks to the grapes used it has medium acidity, but due to the low alcohol, it feels fresh in the mouth and has great ageing potential." - Nicolás Peréz, Winemaker.
