This was great fun to create with Borja, head winemaker at Finca Manzanos. We wanted that trademark freshness from this blend but supported by a touch of richness. Once the blend was looking good, off it went into barrel for six months ageing. This oak ageing gave an otherwise lifted and zingy wine just that extra layer of depth and, while it rested, all its aromas and flavours knitted together perfectly. The is a wine with a dense mouthfeel with lots of peach and apricot, a touch of vanilla, and a long, classy finish.
