Sparkling Shiraz is a unique Australian wine style, first developed in South Australia in the late 1800s. It might seem a bit crazy, but believe us - it works! This wine is made from hand-picked and carefully selected Shiraz grapes which are fermented and then matured for 12 months in French oak hogsheads. After this it is then bottle fermented (just like Champagne) and aged for 5 years to develop layers of flavour and allow the bubbles to develop naturally. Then just before release a small percentage of fortified Shiraz is added to build complexity and add natural sweetness. So, 6 years after the grapes were harvested you finally get a bottle of Black Queen. This really is a labour of love, and all this time and effort is worth it! The wine is bright red with a dense black core. It has concentrated aromas of plum, blackberry and dark chocolate, is naturally low in tannins, and has a Christmas cake finish.
