Margaret River is Australia's boutique winery home. There are innumerable small, quality outfits there because the vineyards are marginal and perfectly suited for excellence. So it's no surprise that Steve has been wanting to add one to the 5OS Project range. After finding just the right grower to work with, they brought the grapes to their McLaren Vale winery to work his magic on. The juice went straight into oak (40% of which is new French Oak, the best money can buy) where it fermented for a few weeks on its own before bottling in Feb 2020. It's certainly not in the subtle spectrum - instead it's super fleshy and vivacious, loaded with ripe, soft fruits and tingling acid. It really opens up after 10 minutes in the glass, hinting it should age well over the next 5-7 years, likely longer.
