Virgin Wines have been working with Gyéjacquot for over a decade as, year after year, the Buying Team has been wowed by the quality of their Champagne. Managed by brothers Cyril and Frédéric Gyéjacquot, the Champagne house prides itself on meticulous vineyard care and the belief that "Only good grapes can produce good wine." Cyril focuses on winemaking, while Frédéric tends to the vineyards - though they are both very hands-on across all parts of the business. Nestled in the Côte des Bar, their 19 hectares of vineyards sit on limestone subsoils of Kimmeridgian clay, enhancing the Chardonnay's freshness and the Pinot Noir's minerality. With Pinot Noir as the dominant grape variety, supported by a small amount of Chardonnay, Gaston Declos Brut NV boasts power and elegance, delivering fruity, round, and rich flavours. Notes of crisp red apple, blood orange, fig, cinnamon, and pastry create a Champagne that is both elegant and structured. This exquisite glass of fizz from a small grower is perfect for celebrations or pairing with seafood starters.

Cyril Gyéjacquot
"Founded in 1970 by brothers Daniel and Michel Gyéjacquot, the House of Gyéjacquot Frères remains a family affair. Today, it is overseen by Michel's sons, Cyril and Frédéric, continuing the brotherly legacy. Nestled in the heart of France’s Aube region, the estate boasts 19 hectares of vineyards spread across eight villages in the renowned Côte des Bar. Pinot Noir, one of the traditional grape varieties of Champagne, dominates their vineyards and is the cornerstone of this House. However, they also cultivate Chardonnay and Pinot Blanc, ensuring a delightful diversity of styles. The winery, set in the picturesque village of Celles-sur-Ource, benefits from the close-knit presence of both brothers and their father, who reside nearby. Cyril and Frédéric are passionate stewards of their vineyards and ardent lovers of nature and uphold the family motto: "Only good grapes can produce good wine." They take immense pride in continuing their family's winemaking tradition, dedicated to producing exceptional Champagne."
"Champagne Gaston Declos has great complexity and richness in the mouth due to 80% Pinot Noir and 20% Chardonnay in the assemblage. It would be perfect as an aperitif, thanks to its freshness, or with a cold starter. It will also be much appreciated at events such as weddings and birthdays." - Cyril Gyéjacquot, Winemaker.
