This Alsace beauty is aged on lees (the left over yeast from fermentation) for 9 months, half of which is in old oak barrels. The oak doesn't impart any flavour, but the aging brings structure, finesse and complexity. It's certainly a wine to savour, and makes an excellent accompaniment to smoked fish such as a trout or salmon salad with endive and pears, mild cheeses like Comté or even a Raclette.
