The Wine The Wine
Italy
Region:Puglia
Everything about the process in making this wine makes perfect sense. First off, the quality of Negroamaro from Salento shines. Further still, the use of the passito method (leaving the grapes to partially dry on the vine) softens the tannins and adds a mouth-filling generosity to the wine. With the heat and this vineyard method, there's a danger of an overly jammy, sticky wine style. But the local sea cools Salento's vineyards each night, allowing the fruit to hold onto its natural freshness.
The Winemaker The Winemaker
Umberto Menini
The son of a Tuscan winemaker, Umberto grew up with vines in the blood. His 40-year career in the wine industry has seen him making wine for some of the most famous producers in Italy, as well as specialising in, and lecturing on, organic methods of production and, most recently, working as an international consultant to some of the most well known producers in the Veneto, Puglia and beyond. His hallmark is precision, both in terms of varietal expression and balance as well as vineyard typicity.
"Negroamaro suits the appassimento wine style perfectly. Leaving the grapes to ripen fully and partially dry (passito) gives the wine the mid-palate fruit to balance with the big tannins." - Umberto Menini, Winemaker.
