Take the two classic Loire varieties and nudge them up against one another in the same bottle and you get a proper explosion of freshness. Both have bracing zest and purity. And the Cape gives a lovely ripeness to boot. And both have very good intensity of flavours. So expect a scintillating and mouth-watering experience.

For me, making wine is mostly about taking what nature provides at the harvest and using my experience to bring out the good bits. It could be the fat ripeness of a hot vintage or the sparkling acidity of a cooler one, that's nature's say. I just gently follow her lines.
