There are a number of wines that have specific uses. You've only really got one choice with this dry white Port and that's to serve it as an aperitif. It really does get the appetite going. Pour it chilled neat, over ice or, our favourite, make a cheeky tall cocktail with it. One part white Port, two parts tonic, a few sprigs of fresh mint, your citrus slice of choice and a healthy amount of ice. It is super refreshing in warmer months and a quality way to get a dinner party started the year round.
The Winemaker The Winemaker
David Guimaraens
David Guimaraens is the 6th generation of the founder of Fonseca Guimaraens. At 18, he set out to experience winemaking in Australia, California and Oregon. David formalised his education in Oenology at Roseworthy Agricultural College in South Australia. After graduating and working, he returned to Portugal in 1990 to join the Fonseca winemaking team. He has been instrumental in producing the Fonseca and Taylor Fladgate wines since, now serving as a Director of Taylor Fladgate and Fonseca.
"Taylor's introduced Chip Dry, a new style of white aperitif Port, in 1934. Made from traditional white grape varieties, it is fermented for longer than usual to give it an appetisingly crisp dry finish.
