A wine that brings together three small cuvées and by combining them together we've looked to create a wine that captures the variety, character and identity of the Côtes du Rhône. It showcases the complexity of the region and how, by using a mixture of the red grape varieties to hand and little touches of oak here and there, you can craft a wine full of red and black fruit character, layers of spice and wild herbs and a load of drinkability.

Purity is what this wine is all about. Only organic grapes are used, harvested at night to concentrate the aromas and flavours. Once in the bodega a natural fermentation ensues - started by the natural yeast flora in the winery. Cool fermentation then allows the maximum fruit flavours to be extracted, before allowing it to warm up to draw out vital tannins which give weight on the palate. No oak is used during this process. This means that nothing obscures the pure essence of these very special Rioja grapes.

Everything about the process in making this wine makes perfect sense. First off, the quality of Negroamaro from Salento shines. Further still, the use of the passito method (leaving the grapes to partially dry on the vine) softens the tannins and adds a mouth-filling generosity to the wine. With the heat and this vineyard method, there's a danger of an overly jammy, sticky wine style. But the local sea cools Salento's vineyards each night, allowing the fruit to hold onto its natural freshness.

Tuffers' Tipples are all selected by Phil himself, with the assistance of our Wine Buyer, Andrew Baker. During Phil's first Ashes tour of 1990-91, he and a few of the England team headed down South of Perth to Margaret River. He was blown away by the beautiful landscapes, stunning climate and, most importantly, the delicious wines! He particularly enjoyed the Shiraz, so now 30 years on, Phil is excited to have his own wine from the region. It has a highly expressive palate with mixed berry fruit, juicy and balanced tannins, with white pepper spice providing great length of flavour on the finish.
