La Novena ('the ninth') references the ninth parcel of Garnacha that completes the wine. Garnacha plantings in Cariñena are aplenty thanks to the grape's excellent suitability to the region. But however vast these plantings may be, there will always be little pockets with a slightly different microclimate or soil that changes the wine. These pockets, or 'parcels', can be brought in and vinified separately and then put back together based on taste, so you can ensure the wine that ends up in the glass ticks all the boxes.

Virgin Wines have been working with Gyéjacquot for over a decade as, year after year, the Buying Team has been wowed by the quality of their Champagne. Managed by brothers Cyril and Frédéric Gyéjacquot, the Champagne house prides itself on meticulous vineyard care and the belief that "Only good grapes can produce good wine." Cyril focuses on winemaking, while Frédéric tends to the vineyards - though they are both very hands-on across all parts of the business. Nestled in the Côte des Bar, their 19 hectares of vineyards sit on limestone subsoils of Kimmeridgian clay, enhancing the Chardonnay's freshness and the Pinot Noir's minerality. With Pinot Noir as the dominant grape variety, supported by a small amount of Chardonnay, Gaston Declos Brut NV boasts power and elegance, delivering fruity, round, and rich flavours. Notes of crisp red apple, blood orange, fig, cinnamon, and pastry create a Champagne that is both elegant and structured. Just outside the ancient city of Rome, our winemaker Ivano Emiliani is working to create a beautifully fresh Pinot Grigio. Lazio is renowned for bold and fruity Pinot Grigio. By working with the volcanic soils, Ivano has managed to maintain the fresh and zingy acidity whilst creating sumptuous notes of lychee and pear. As a result, this wine is perfectly balanced and harmonious. A great tipple to be enjoyed chilled in the sun.

El Zumbido ('the buzz') is a local nickname for the wind that whistles through the vines up in the hills of Cariñena. This wind is critical to the style of this Viura. Ripened well in the Spanish sun, the grapes develop lovely peach aromas backed up by pear. But it's the El Zumbido that keeps the wine from becoming overripe and sticky, delivering an integral freshness that completes a very moreish wine.

After trying 2 different plots of Sauvignon Blanc, one with joyful tropical fruits and the other with peachy elegance and finesse, it was decided that the buyers would create their own bespoke blend, combining the best of both worlds. After much taste-testing, they settled upon what they believe is the perfect balance of exuberance and poise. A wine that lovers of this grape will enjoy exploring, whilst also feeling right at home.
