When you turn it down from 11 and aim for a solid 8 you can really appreciate the flavour profile of this classy grape variety. This wine bridges the gap between New World fruitiness and Old World elegance. Plenty of stone fruit character with a freshness that belies the warm clime.

Wine may be considered art by many, but it's the science behind each particular vineyard that shapes the character of the finished wine: location; climate, soil plus that little enigmatic something that the French call "terroir". This Sauvignon Blanc hails from a fine single site in a unique desert-influenced location, where searing sun coaxes the grapes to perfect ripeness, whilst cooling breezes provide welcome coolness, imbuing the fruit with great depth of flavour. It shows tight and bright tropical fruit but remains restrained and controlled with a lovely refreshing edge to it. A singular expression of a unique and special place.

We fought good and hard to get this, with our winemaking team in Oz to help us. We have loads of Remington-liked-it-so-much-we-bought-the-company moments and this was one. A wonderful parcel of South Australian Sauvignon Blanc came up, and we bought it all for a knock-off trotter price. Which is not to say the wine isn't awesome. This one is clean as a whistle and has crisp citrus and tropical fruit allure.

It hails from a family-owned Bodegas in La Rioja, meaning it's been made with the best care and attention - and that means one thing - an all-round fantastic wine. This example is expertly crafted by one of our longest standing winemaking partners, Ryno Booysen, using carefully selected parcels of grapes form the coolest vineyard sites in the Western Cape. It is an exceptional example of this variety that is packed with fresh lime fruitiness that mingles with a little bell-pepper spice. The finish is crisp, refreshing and wonderfully long.

El Zumbido ('the buzz') is a local nickname for the wind that whistles through the vines up in the hills of Cariñena. This wind is critical to the style of this Viura. Ripened well in the Spanish sun, the grapes develop lovely peach aromas backed up by pear. But it's the El Zumbido that keeps the wine from becoming overripe and sticky, delivering an integral freshness that completes a very moreish wine.
