The Welsh owners of this near organic estate on the beautiful banks of the Garonne have tried their utmost to produce wines expressing the best of the well-drained, mineral-rich Graves soil. This Rouge is carefully blended from Cabernet Sauvignon and Merlot. It's fruity and smooth with firm tannins and nice oak. Through age it's starting to show the peppery notes of classic Graves, with liquorice, pencil, dried herb and earthiness melding nicely with blackcurrant and red cherry fruit.

On the left bank of Bordeaux Cabernet Sauvignon is King. Whip to the right and the King takes a back seat - Merlot becomes the chauffeur. It's the terroir. The high proportion of clay in Saint-Émilion and cooler conditions provide the idyllic environment for Merlot. At this estate grapes are hand-harvested but minimal intervention takes place, yielding very natural wines. Classic aromas of ripe plummy fruit layer both the aroma and palate of Chateau Bel Air and 12 months in oak adds texture and depth.

Puisseguin Saint-Émilion suffers from a lack of recognition compared to its more prestigious neighbour (Saint-Émilion), but there are some real gems out there if you know where to look. For us, Château La Diligente is just such a diamond - rich, powerful yet fresh and with a nice complexity. It shows lovely aromas of strawberry, raisin and plum, with cedar, clove and vanilla notes all coming from its time spent maturing in oak barrels.

Château La Raze Beauvallet lies in the heart of the Médoc, and the vineyards surround the 19th century château. The vines benefit from a gravel and fossil rich soil, and the careful attention given in both the vineyard and winery means that Château La Raze Beauvallet has achieved the honoured status of a Cru Bourgeois for over 60 years. This vintage has some bottle age, so expect tell-tale aromas of tobacco from this Cabernet-Sauvignon-dominant blend, with Merlot, Petit Verdot and a touch of Cabernet Franc.

You might associate Bordeaux with red wines, but their sparkling wines are worth uncovering; much rarer, but equally as fine. This Crémant is crafted by a small family grower, made in the same way as Champagne, but uses the local grape varieties of Merlot, Sémillon and Muscadelle. It is aged in cellars for up to 24 months before release, where during this time it acquires a new, richer character for you to enjoy and savour. Julien Barthazac Crémant de Bordeaux is brilliantly versatile as it will charm the palate with seafood starters, or desserts such as a lemon tart.

Château du Seuil was acquired in 1988 by a Welsh couple, Bob and Sue Watts, and the traditions they established are carried on by their daughter. Nicola now runs the estate with her winemaker husband Sean, who is originally from New Zealand. You can sense his influence on this wine with its aromatic and fruit-forward style, yet the elegance in the glass is pure Bordeaux. It is made from a blend of free-run juice and direct pressing of Merlot grapes, which are then fermented in stainless steel for maximum refreshment. It is an excellent rosé for all year round, which works as an aperitif or an accompaniment to food.

This is the result of a wonderful opportunistic blending session, that was meant to deliver (and did) a premium, organic-in-conversion red. We saw such great elements of the white that we had to have a go; a go at making a bespoke Château du Seuil Virgin cuvée. This is a lovely, structured and textural Sauvignon Semillon blend that has a very classic feel as well as being viscerally fresh and exhilarating.

Good white Bordeaux at this price is hard to find but we've done it. Welsh-owned vineyard, Chateau du Seuil has created this golden delight from 70% Semillon, 30% Sauvignon and is fermented in new oak. It's full, fresh and fruity, with an aromatic nose and glows golden in your glass. If you think you've tried white Bordeaux, think again! It's a great little vegan option, but also goes well with shellfish or deli meats and will age for up to five years.
