The Spirit The Spirit

The Hatozaki whiskies are named after the oldest lighthouse in Japan and this blended release sees the marriage of both malt and grain whiskies. The new make spirit is crafted by Master Blender and Head Distiller Kimio Yonezawa and is then aged in a wide variety of cask types, including sherry, bourbon, Japanese cherry tree and mizunara oak. This imparts an array of character and helps create a complex flavour profile that we absolutely love.

The Kaikyo Distillery was finished in 2017 and forms a part of the Yonezawa family's business. It is a celebration of 100 years since they began distilling Shochu in 1917! The Yonezawa family have been making artisan Sake in Akashi City since 1856 and from one generation to the next, the family has kept their legacy alive by continuing to develop their spirits expertise. Today, Kimio Yonezawa is Master Blender and Head Distiller, using his experience and heritage to follow his dream to establish the Kaikyo distillery.
The Perfect Serve The Perfect Serve
You can, of course, drink this high-end Japanese whisky neat or on the rocks but we feel it really comes into its own when mixed into a highball drink. Grab a tall class and a cocktail shaker. Half fill the glass with crushed ice. Pour in 35ml of whisky, 5ml of fresh lime juice, a dash of angostura bitters and half a teaspoon of sugar into the cocktail shaker. Shake well, strain into your glass, top with soda water and garnish with a wedge of lime!
