The Spirit The Spirit
Scotland
Region:Highland
Pure, clean water is vital when it comes to making single malt whisky of exceptional quality but the process used at the Fettercairn Distillery takes things a little further. During a distillation back in the 1950s, as whisky makers sought ways to create a purer expression of their spirit, they discovered sprinkling water over the still cooled it, increasing condensation inside so only the lightest vapours could rise for collection. So they added a cooling coil to drench the still in water, which was unique at the time and remains in place today!
The Distillery The Distillery
Located in the foothills of Scotland's Cairngorms, the Fettercairn Distillery has access to exceptionally pure water. Not only do they use this as a key ingredient in their whisky making they also use it to cool their copper still whilst in operation, which adds condensation on the inside ensuring only the finest vapours can rise to the top for collection! The development of this process has led to a signature style showing wonderful floral notes with plenty of stone and tropical fruit.
The Perfect Serve The Perfect Serve
We think that the tropical fruit character of this lovely whisky lends itself to making a simple Champagne cocktail. You'll need a nice flute to make and serve it in. Get yourself a sugar cube and soak it in a few dashes of angostura bitters (you can play around here with different flavoured bitters, orange or creole for example) for a minute or so. Drop the soaked cube into your flute and pour over 35ml of whisky. Finally top up with Champagne (or Crement) and enjoy.
