West Cork Distillery founded in 2003 is the most southerly located distillery in Cork which provides a unique microclimate that is ideally suited to the maturation of Irish whiskey. At WCD they only use Irish grown grain. They triple distil all their whiskies and interestingly only half fill the pot stills in order to allow for maximum copper to spirit vapour interaction, key to the production of high-quality Irish whiskey.
