Absinthe is one of the world's oldest and most mysterious spirits having been made illegal more than a few times over the centuries of its existence! This is a modern take on the traditional French recipe and was create by George Rowley in 2008. In addition to the classic absinthe ingredients, George added natural Madagascan vanilla and cocoa pods to the distillation and the resulting green spirt is then cut to 40%abv using demineralised water before blending and bottling.
