The Spirit The Spirit
Nicaragua
A full-bodied Central American rum, aged in small 180 litre 2nd fill American white oak casks in the unique climate at the foot of the San Cristóbal volcano in Nicaragua. The high volcanic temperatures increase the rate of evaporation of the spirit in the casks and produce rums of distinctive character due to the intense interaction between the spirit and the barrel. This 12 year old release is rich, packed with red fruits and toasted nuts.

The story of Flor de Cana is one of bravery and adventure and it began in 1875 when Alfredo Francisco Pellas Canessa, a young man from Genoa, Italy, risked everything by leaving the comforts of the old continent to travel to the exotic country of Nicaragua. In 1890 he found the perfect setting for the Flor de Cana distillery at the base of the San Cristóbal volcano, the tallest and most active volcano in Nicaragua! Madness or genius? Only time would tell. The fertility of its surrounding lands, a pure water source and the hot volcanic climate were instrumental in forging the rum's unique and distinguished character. Through its 130-year history, the brand, the company and the family have lived through a civil war, nationalizations, hyperinflation, earthquakes and volcanic eruptions. Throughout all this, and against all odds, the company has also been able to remain a family business for five generations.
The Perfect Serve The Perfect Serve
We love to use this in a rum old-fashioned, swapping out bourbon or whisky for this 12 year old rum. However, it also works when paired with ginger ale and a squeeze of fresh orange. Use a highball glass, plonk in some ice, add 35cl of rum, a squeeze of fresh orange and top up with ginger ale. We prefer ginger ale as opposed to ginger beer as it allows the rum to the fore. Garnish with a wedge of fresh orange, et voila!
