The Spirit The Spirit

This is a wonderful light and fresh Mezcal that brings together two agave varieties in one expression. A little like blending the different characters you find in Cabernet Sauvignon and Merlot in the great wines from Bordeaux, if you like. The body is of medium weight with just enough mouth coating texture, but it is far from viscous. Subtle notes of caramel and smoked cocoa come from the Espadin agave which is rounded out by the complexity of the Tobala agave with its dried fruit notes, citrus freshness accompanied by hints of cucumber and a little cooked agave.
The Perfect Serve The Perfect Serve
This is a lovely refreshing mezcal based cocktail that works well all year round. It will slake your thirst on a summer's day or get the appetite ramped up during the colder parts of the year. Grab a highball glass and load with ice. Pour in 40ml of mezcal, 10ml fresh lime juice and fill glass with pink grapefruit soda water. Gently stir and garnish with a lime wheel.
